Do you have anyone in your house who fuss over eating veggies, kids/adults?? Then you can definitely try this recipe, as they wouldn't even know what they're eating. No picking out veg pieces and placing in the corner of the plate for this dish, as the veggies are sautéed and pureed to make the base gravy. I've used paneer here, but if you don't like it you can use potato too. I got this recipe very long back from a cookery show, and it has never failed me. So try it out and do let me know how it turned out.
Paalak - 8 - 10 leaves
Cabbage - chopped/sliced - 3/4 cup
Carrot - 1 - cut in cubes
Beans - 6 - chopped
Paneer - 250 gms - cut in cubes
Onion - 1 - chopped
Ginger garlic paste - 1 tsp
Turmeric powder - 1/4 tsp
Kashmir chilli powder - 1/2 tsp
Garam masala powder - 1 tsp
Jeera powder - 1/4 tsp
Salt - to taste
Butter/Oil - 1 tbsp
Put the first four ingredients in a microwave safe bowl and microwave for 5 - 7 mins. Or you can simply saute them in little oil for the same time. Grind this in a mixer to a smooth paste. Saute onions with little salt in a pan until it turns light brown. Add ginger garlic paste and saute for another minute. Add the chilli powder and turmeric powder, saute for a minute. Add the ground paste and required amount of water as to the amount of gravy required. Add salt to taste. Add the garam masala and jeera powder. When the gravy starts to bubble, add paneer cubes and mix well. Cover and cook for 2 minutes. Switch off flame. Sprinkle a a pinch of garam masala powder on top.
Note : You can add little cream at the end for a rich creamier gravy. I haven't added in this one.
