Egg Biriyani


This is my first attempt at making a biriyani with boiled egg. Usually I go for vegetarian, chicken or fish biriyani. But this time I thought I'd use egg for a change. And so began my search for a suitable recipe that would meet my requirements - simple n delicious. It ended with me finding out this one recipe and I'm glad it turned out fine.


Ingredients

  1. Basmati rice - 1 cup
  2. Water - 1.5 - 2 cups
  3. Boiled eggs - 3
  4. Onion - 1 - sliced
  5. Tomato - 1 - chopped
  6. Ginger garlic paste - 1 tsp
  7. Green chilly - 2 - chopped
  8. Bay leaf - 1
  9. Cinnamon stick - a small piece
  10. Cloves - 4
  11. Fennel seeds - 1 tsp
  12. Turmeric powder - 1/4 tsp
  13. Red chilly powder - 3/4 tsp
  14. Curd - 1 tbsp
  15. Coriander leaves - few - chopped
  16. Salt - to taste
  17. Ghee/oil - 1 tbsp

Method

Heat ghee/oil in a cooker. Add the whole spices 8 - 11. Saute for a few seconds. Put the rice and mix well. Add water and required salt, cover and cook for 1 whistle.

 Heat oil in a pan. Add the sliced onion and saute till it turns golden brown. Add the ginger garlic paste, saute till the raw smell goes. Add the chopped tomato and green chilly and saute for a minute. Add the masala powders and saute for 2 mins. Add curd, few chopped coriander leaves and mix well for another minute. Place the boiled egg in this masala. Cover and cook in low flame for a minute. Switch off.

Set the rice and the masala in layers and garnish with fried onions and cashews.
