Kodappan/Banana flower is said to have a high nutritional value as it is a good source of fibre. I used to be a picky eater (kinda am still now, but a bit better) before being a mom. And out of the veggies I used to avoid, this one stood out. But lately, my mom has succeeded in convincing me to eat more of such veggies as I'm feeding my little one and she keeps telling me - " Eat these so that you're baby gets the essential vitamins too". Since its for my baby, I end up doing so. This recipe is my mom's, hope you'll like it too.
- Kodappan/Banana flower - 1 - chopped
- Vanpayar/Red beans - 1/4 cup - cooked
- Onion - 1 - chopped / Shallots - 10 nos - sliced
- Turmeric powder - 1/4 tsp
- Whole red chilly - 2
- Mustard - 1/4 tsp
- Curry leaves - 1 sprig
- Coconut oil - 1 tbsp
- Salt - to taste
Heat oil in a pan. Add mustard & red chilly. When it splutters add curry leaves, sliced onions/shallots, saute till it becomes light brown. Add turmeric powder, saute. Add cooked red beans, chopped kodappan into it. Mix well. Add salt. Cook covered in low flame till its done, and all the water contents in it have evaporated. Stir in between so that it does not stick to the pan.
