Paalak Kulcha

Kulcha's are usually made completely with maida / all purpose flour. But here I've tried it with more wheat flour (and less maida) to make it healthy and instead of coriander leaves I've used paalak leaves. 

  1. Whole wheat flour - 2 cups
  2. Maida / All purpose flour - 1/2 cup
  3. Baking powder - 1/4 tsp
  4. Baking soda - 1/2 tsp
  5. Sugar - 1 tsp
  6. Salt - as required
  7. Palak leaves - 5 - 6 - chopped
  8. Yoghurt - 1/2 cup
  9. Oil - 2 tbsp
  10. Water - as required for kneading


Add all the ingredients from 1 - 6 in a mixing bowl and mix well. Add 7 - 9, water as required and knead to a smooth dough. Keep it covered for more than an hour. Divide the dough into 12 equal portions. Roll / flatten the dough into a circle like you do with rotis, take a knife and cut the circle in half ( this step is optional, you can retain its actual shape if you want ). Heat a tawa / non stick pan in a medium flame. When the pan gets hot, place the rolled out dough on the pan and cook till the bottom gets brownish spots. Flip over and cook similarly. Remove from the pan. Repeat with the remaining dough.

Note :  You can add ghee / butter on the cooked kulchas for a better taste.
