Baby corn Pulav



Usually I go for a manchurian or dry dish whenever I buy baby corn, but this time I searched for a recipe that used baby corn for something else that's interesting as well as quick (nowadays I go for recipes that can be done quickly as its not easy to handle kids, school work, studies, projects, 'home' work all together ) and I found this recipe for a simple pulav. All I can say is, its worth a try.


Ingredients
  1. Basmati rice - 2 cups
  2. Baby corn - 6 - 8 pcs - cut into small pieces
  3. Onion - 1 - sliced + 1 - chopped
  4. Green chilly - 1 - chopped
  5. Curd - 2 tbsp
  6. Turmeric powder - 1/4 tsp
  7. Coriander powder - 2 tsp
  8. Red chilli powder - 1 tsp
  9. Bayleaf - 1
  10. Cloves - 4
  11. Ginger - a small piece
  12. Garlic - 6 nos
  13. Garam masala powder - 3/4 tsp
  14. Salt - to taste
  15. Ghee - 1 tbsp
  16. Oil - 1 tbsp

Method

Grind chopped onion with ginger, garlic and all masala powders with little water to a smooth paste. Heat ghee & oil  in a pressure cooker, add the bayleaf and cloves. Saute for a minute and then add the sliced onions and green chilly. Saute till onions turn light brown. Add the masala paste and baby corn, mix well. Saute the mixture for around 6 - 7 mins. Add curd, stir, add rice and water (3 cups), close the cooker and when 1 whistle comes, switch off. After the pressure goes, open the cooker and gently fluff the rice with a fork. Serve with a raita of your choice.
